I absolutely love this quiche!  It’s super tasty!  And you can’t get any easier!

I printed off a version of this recipe from GroupRecipes.com back in 2009. I wasn’t sure the first time I made it that I would like the flavor combinations.  So I ended up altering the ingredients a bit, and it just works.  The cheeses and the crab give it a richness without any heavy cream or butter added.  I love getting a bite of the tangy blue cheese, which just perfectly cuts the richness.  These flavors together make this quiche taste fancy (if you can describe a food like that).

My husband and I love to eat the leftovers of this quiche for a super quick before-work breakfast during the week.  Sure, the crust is a little soft when reheated in the microwave, but the delicious flavor makes up for that.  🙂

Ingredients
  • 1 Prepared pie crust
  • 6 ounces Imitation crab, cut in bit-sized pieces
  • 1/4 cup Blue cheese, crumbled
  • 1 cup Mozzarella cheese, shredded
  • 1/8 tsp Onion powder
  • 1/8 tsp Black pepper
  • 4 Eggs
  • 1 cup Milk
  • 1/2 cup Parmesan cheese, grated

Instructions
  1. Preheat oven to 350 degrees F.
  2. Roll out and shape pie crust in pie dish.
  3. Spread crab, mozzarella, and blue cheese in crust.
  4. Whisk together eggs, milk, onion powder, and pepper and pour slowly into crust.
  5. Sprinkle with parmesan and bake for 45 minutes or until parmesan cheese is browned.
  6. Allow to set around 5 minutes before cutting into wedges to serve.
Recipe Notes
  • For the crust, you could use frozen, refrigerated (unroll and shape, like I did), or make your own!
  • For extra flavor, you might add 1 chopped green onion in with the cheese and crab (and omit the onion powder).
